I have been baking apple cake from Norene Gilletz’s “Second Helpings Please” cookbook for years. I modified it a bit and made a Gluten-Free version. Find below my GF version, as well as Norene’s original version.
Gluten-Free Apple Cake Recipe
3/4 cups sugar
1/2 cup oil
1/2 cup apple sauce
2 tsp vanilla extract
1/4 cup orange juice
1 1/2 cups All Purpose GF Flour of your choice
3 tsp baking powder
1/4 tsp salt
6-8 apples mixed with 1 tbsp sugar and 2 tsp ground cinnamon
Beat eggs, sugar and vanilla until fluffy. Beat in oil. Add liquid alternately with dry ingredients and beat just until smooth. Spoon half of batter into lightly greased 9″ square baking pan. Spread evenly with rubber spatula. Add apples which have been sprinkled with Sugar and cinnamon. Cover with remaining batter. Sprinkle with icing sugar. Bake at 350 degrees for 50-60 minutes, until nicely browned.
