If you are ok with Gluten-free Oatmeal and dairy, here is a super lacy chewy cookie!
They can be mixed and baked right away or roll the dough up in a log and freeze. Cut and bake chunks as you like.
Mix together and set aside: (dry mixture)
1.5 cups of all purpose gluten-free flour with xanthan gum already inside (or add 3/4 tsp of xanthan gum separately)
2.5 cups of old fashion oats (not the quick oats)
1 tsp baking soda
1/2 tsp salt
1 tsp ground cinnamon
In a mixer, beat until creamy:
1 cup of room temperature unsalted butter (or margarine)
1 cup of brown sugar, packed
1/2 cup organic or granulated sugar (optional)
Add and mix until fully incorporated :
1 tbsp vanilla extract and the dry mixture
2 large eggs
Add and mix by hand:
1 cup of dried cranberries
1 cup of white chocolate chips
Spoon out dough onto cookie sheets and bake at 350 degree oven for 10 minutes.
Or place dough in saran wrap or parchment paper and roll into a log. Freeze. Cut slices when ready and bake as above.
