I have been asked for my recipe for sweet potato latkes many a time and want to share it with you. It can be adjusted but as is, is sweet and spicy all at the same time! It’s a family favourite and I hope it will be yours too!

700 g Sweet potato shredded
1/2 cup (100 g) GF All Purpose Flour with xanthan gum or add ¼ tsp xanthan to all purpose flour that has no xanthan in it already
2 tsp granulated sugar
3 tsp brown sugar
1 tsp baking powder
3/4 tsp cayenne pepper
2 tsp curry powder
1 tsp cumin
1 1/2 tsp salt
1 bunch corriander, stems removed, washed, dried and chopped
1 tbsp agave
2 eggs
1/2 cup coconut milk
1 tsp sambal olek (If you like spicy)

Mix all the dry ingredients together in a small bowl
Mix all wet ingredients in separate small bowl
Peel potatoes and shred in large bowl.
Add wet ingredients first until all is incorporated
Add dry ingredients until all powder disappears.
You are ready for frying or baking.
