I love simple snacks and easy to make recipes is just my speed!

My kids like graham crackers as a snack, so this recipe is perfect to whip up a batch and keep some for crackers for snacking and the rest for making a pie crust. I often make frozen pies in the summer with this crust. Key lime pie and frozen lemon pie. I will share these with you soon.

These crackers can be made vegan or if you like the butter taste and can tolerate dairy and eggs, just exchange the margarine to butter and replace the water with an egg. You can sprinkle cinnamon and sugar on top of the crackers before baking or dip the plain ones you bake in chocolate. You can make smores with large square shapes or make thinner strips with fork prongs for that graham cracker look!

The recipe can be made using a mixer with paddle attachment or you can use a food processor with blade attachment. If you don’t have either, it can be done the old fashion way….elbow grease! Happy baking!

Graham Crackers:

  • 2 cups of all purpose gluten-free flour (310 g)
  • 1/3 cup of dark brown sugar (72 g)
  • ½ tsp salt
  • 1 tsp cinnamon
  • 1 tsp baking powder
  • 1 stick of dairy free margarine, cut into chunks (1/2 cup, approx. 113 g) OR
  • ½ cup of butter, cut into chunks
  • 1 tsp vanilla extract
  • ¼ cup honey (80 g)
  • 1 tbsp water OR 1 egg

Place dry ingredients (flour, sugar, salt, cinnamon and baking powder) in a mixing bowl with a paddle attachment. Mix so that they are evenly disbursed. Add margarine or butter chunks, and liquid ingredients. Put on low speed for 2 minutes. Move to medium speed and wait until the dough collects into a ball. The dough should be soft. If you think it is too dry, add a tsp of water and continue to mix.

Once the dough is ready, divide into 2. Roll out each piece in a square or rectangle ¼” to an 1/8” as you please. You may need all purpose flour to keep the rolling pin and surface from sticking. Place onto a parchment paper and onto a baking sheet. Cut squares, rectangles and prick with fork to get the “look”.sprinkle cinnamon and sugar mixture on top if you like.

Bake at 350 degrees for 12 minutes. Add a minute or 2 if the dough is thicker and if you like it super crunchy. Let cool. Place in air tight container.
